Fat Substitutes

Many many times, we end up searching for low-fat recipes. We could as well learn to substitute fats in a way that is easier for us to tailor recipes on our personal needs.

I have two sites to bring to your attention.

This is from the Mayo Clinic, and also has substitution tricks for sugars and salt.

But this one is a real encyclopedia!

My personal way of substituting butter in bakery is:
2 parts of apple sauce
1 part of corn starch
1 part of soy lecithin
