Spice It Up!

Cooking low-fat is hard also because the food might not taste as rich.

However, there are some interesting ways of making the taste richer, one of which is the liberal use of spice (some of them, like oregano and cloves, have loads of omega3s). McCormick's site has an awesome Spice Encyclopedia you can use.
